Blackened Sumac Salmon
Fresh Atlantic salmon seasoned with sumac and spices, usually served over fresh salad.
Ingredients:
1 piece Fresh salmon filet
1 tsp Sumac
½ tsp Chili Powder
To taste Salt and Pepper
Drizzle Olive Oil
2 each Oranges, juiced and zested
Directions:
- On a clean cutting board, de-skin salmon filet and cut into 4 oz pieces.
- Season salmon with spices and oil and set off to the side.
- Pre-heat a pan with olive oil, preferably a non-stick pan, salmon can sometimes stick.
- Sear salmon on both sides to an internal temperature of 145F or to your liking.
- Serve over fresh salad or vegetables.
Glaze
- In a pan, add sugar, orange juice, and sugar
- Cook down until thick
- Drizzle over salmon
Sweet Onion and Jicama Salad
Fresh and crisp salad to brighten any dish.
Ingredients:
½ Medium sweet onion, thinly sliced.
¼ cup Orange segments.
½ cup Arugula.
¼ cup Jicama, thinly sliced.
Drizzle Any vinaigrette of your choosing.
Directions:
- Combine all ingredients in a bowl and thoroughly mix.
- Place on selected plate or bowl.
- Optional: drizzle any vinaigrette over the top.
Buttermilk Panna Cotta
Italian dessert paired with fresh fruit.
Ingredients:
1 ¾ tsp Gelatin
3 tbsp Cold Water
1 ¾ cup Heavy Cream
½ cup Sugar
1 tsp Vanilla Bean Paste
½ tsp Salt
1 ½ cup Buttermilk
Garnish Fruit
Directions:
- Combine gelatin and cold water and sit for 5 minutes.
- In a small pot, combine cream, sugar, vanilla, and salt over medium heat until sugar is dissolved.
- Temper warm cream mixture over the gelatin and stir well. Strain out any solids.
- Add buttermilk.
- Evenly divide the mixture into 6 glasses or containers of your choice and refrigerate overnight.
- Serve in a container or dip into hot water to release and place on a plate. Serve with fresh fruit.
